                                                       " rice khichdi " 

make this piping hot dish- with a home good feel in a short time 


INGREDIENTS 


1 CUP UNPOLISHED BROWN RICE(Available in all supper markets )
cups of chopped veggies (potato,carrot,beet,onion,tomatoes,frenchbeans,corn )
 5to 7 leaves  of kaddi patta & phudina & lemon stalks
water as reqd
salt,aesofotida,ground green chillies(all as per taste)
2 tablespoons grated fresh coconuts 
a small bunch of coriander,chopped,washed & cut for garnishing 
rye/jeera -1 teaspoon for the baghar. 

wash the rice 3 to 4 times in fresh water & keep aside. Then in a cooker pour the oil ,add rye jeera for the baghar.Once it starts crackling add aesofotida,kaddipatta,phudina,lemon grass . After stirring this 2 times add the remaining veggies ,washed in a pan & stir for another 5 minutes.After that add the coconut & rice & adequate water to cook in the pressure cooker. Normally the water  should be atleast  double the level of all your ingredients .Add salt & chille paste & cook on high flame till 3 whistles & balance 2 whistles on slow flame. Off the gas & serve hot ,with coriander  shavings .


THIS  IS A GREAT NUTRITIONAL DISH, DUE TO THE UNPOISHED RICE &  COOKED WITH THE MOST BASIC INGREDIENTS !!!!
